Like the turbot, the sole is born with bilateral symmetry, but it undergoes metamorphosis by the age of 15 days, becoming benthic. It is an olfactory-driven predator, feeding in the dark and at the bottom of the tank, eating more often but in smaller quantities than the turbot. Selling weights range from 400g to 1.2kg, with the most marketable size being 400-600g

As with turbot, adding our sole to your diet is a great option to guarantee flavour, freshness (histamine ≤ 5mg/100g of fillet) and, of course, health, given its nutritional characteristics in terms of protein (≥18g/100g of fillet) and polyunsaturated fat (≥1.35g/100g of fillet).
